Quinoa

Tabbouleh with Quinoa


- Japanese chopped 1 cucumber,
- 1/2 cup quinoa,
- 1/4 cup chopped mint,
- 1/4 cup green onions,
- 1/2 cup chopped red onion
- 1/2 cup chopped tomatoes,
- 3 tbsp extra virgin olive oil,
- juice of 1/2 lemon
- salt, vinegar and pepper to taste
 
Preparation:
1) Cook the quinoa according to package directions. Leave aside to cool.
 
2) Mix the following ingredients, cucumber, parsley, chives, mint, onion, red bowl on a part,

3) Add the quinoa with the other ingredients in bowl and season with olive oil, lemon, vinegar, salt and pepper to taste.

4) You can decorate with lemon slices and lettuce leaves.
