Tips for cooking beans

Bean is a very common meal on the brazilian table. The black beans, they say is the most nutritious, further accompanied by rice and kale or colored green.

The beans go well with  meat, following a simple steak, salad, vegetables, etc. Once we get bored of eating rice and beans, to make a bean soup is good!


Usually american buy beans in a can, but it is not so difficult to cook if you know some tips.

To cook 500g of beans of any sort, soak 20 to 24 hours in warm water (enough to completely cover the beans). You can freeze half if you do not need every thing.

The next day, after soaking, the water becomes turbid, it is  because of the fermentation, which causes a release of gases from the beans. The water should also be slightly foaming. Nothing to worry about! This beans to a colander and will be washed under running water before going to cook. Before placing the spices for cooking is necessary to boil until it foams a lot.  It will become as the picture above.Then again washed in running water to remove all foam and gases, which in our stomach and instestinos could cause some discomfort.

Fry   1 medium onion, grated garlic and 4, who likes meat, sausage or bacon, chop and place in the pan also.

When the mixture begins to brown, I throw the beans in the pot slowly, with a 2 or 3 dried bay leaves. Fry and covered with water.

Slow cooking takes 3 to 4 hours, but those who prefer can put pressure cooker for 25 minutes. They say it is healthier the slow cook.

During cooking hits up the seasoning with salt and pepper. At the plate, faint, use a little bit of hot sauce.

Even leaving the beans over night in the water, beans are a legume difficult to digest, especially for brand new babies too.
